Instructions

  1. 1

Cook the seasoned beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up, until no pink remains and the edges start to brown. Drain excess grease if needed. Sprinkle taco seasoning over the beef, pour in the water, and stir. Simmer 2–3 minutes until the liquid thickens slightly and coats the meat in a saucy layer with a slight sheen.

  2. 2

Flavor the rice: In a bowl, combine the warm cooked rice, butter, lime juice, cilantro (if using), and a pinch of salt. Stir until the grains are lightly glossy and separated. The rice should smell bright and citrusy, not plain or starchy.

  3. 3

Make the creamy chipotle sauce: In a small bowl, mix sour cream, mayonnaise, minced chipotle peppers, adobo sauce, garlic powder, cumin, salt, and a tiny pinch of sugar. Stir until smooth and pale orange. Taste and adjust with more chipotle for heat or a bit more mayo if it feels too thick. It should be creamy enough to drizzle but not runny.

  4. 4

Warm beans, queso, and tortillas: Gently warm refried beans and nacho cheese/queso in separate small pots or in the microwave until hot and spreadable. Stack the tortillas on a plate and cover with a damp paper towel; microwave 20–30 seconds until pliable and soft. Warm tortillas fold and roll without cracking.

  5. 5

Make the cheese quesadilla base: Heat a large nonstick skillet on medium and add a light swipe of butter or oil. Place one tortilla in the pan and sprinkle about 1/2 cup shredded cheese evenly over the surface, leaving a 1/2-inch border around the edge. Top with a second tortilla and cook 1–2 minutes per side. The quesadilla is ready when the cheese is fully melted and the tortilla has light golden spots but is still flexible, not crisp. Repeat for remaining tortillas so you have 2 large quesadillas.

  6. 6

Build the burrito layer on the quesadilla: Lay one warm quesadilla flat on a board. Down the center (leaving 2–3 inches on each side for folding), spread a strip of refried beans. Add a line of cilantro-lime rice on top, then a generous spoonful of seasoned beef. Drizzle with nacho cheese and a spoonful of enchilada or taco sauce. Sprinkle extra shredded cheese over everything for that cheesy burrito effect.

  7. 7

Add sauce and roll the quesarito: Drizzle 1–2 tablespoons of the creamy chipotle sauce over the fillings so it lightly coats the top. Fold the sides of the quesadilla in over the filling, then fold the bottom up and roll tightly into a burrito. You should see the ends sealed and the burrito hold its shape without gaps.

  8. 8

Toast the outside (optional, but recommended): Place the rolled quesarito seam-side down in a dry skillet over medium heat. Cook 1–2 minutes per side until the outside gets light brown spots and feels slightly crisp while the inside turns extra melty. Slice in half to serve; you should see distinct layers of rice, beef, cheese, and sauce.

A quesarito is a Taco Bell-style hybrid: a melted-cheese quesadilla used as the wrapper for a burrito filled with seasoned beef, rice, beans and sauce. This version makes 2 quesaritos in about 35 minutes (15 prep, 20 cook), using a chipotle cream sauce and nacho cheese for the saucy, cheesy result. You only need a skillet and a microwave or small pot for warming the fillings.

Ingredients

For the Seasoned Beef

  • 1 lb ground beef (80/20 works best for flavor)
  • 2-3 tablespoons taco seasoning (homemade or packet)
  • 1/3 cup water (to bloom the seasoning and create a light sauce)
  • Salt, to taste (only if your seasoning is low-sodium)

For the Rice

  • 2 cups cooked white rice (day-old rice reheats well)
  • 1 tablespoon butter
  • 1-2 teaspoons lime juice
  • 2 tablespoons chopped fresh cilantro (optional, for a fresco style)
  • Pinch of salt

For the Creamy Chipotle Sauce

  • 1/2 cup sour cream
  • 2-3 tablespoons mayonnaise
  • 1-2 chipotle peppers in adobo, minced, plus 1 teaspoon adobo sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • Pinch of salt and sugar (balances the heat)

For the Quesadilla Shell

  • 4 large flour tortillas (burrito-size, 10-inch)
  • 2 cups shredded Mexican blend cheese (or cheddar + Monterey Jack)
  • 1 tablespoon butter or neutral oil (for the skillet)

For Filling and Assembly

  • 1 cup warm nacho cheese sauce or queso
  • 1 cup shredded cheddar or Mexican blend (for inside the burrito)
  • 1 cup canned or homemade refried beans, warmed (optional but classic)
  • 1/2 cup mild red enchilada sauce or taco sauce
  • Optional toppings: diced onions, shredded lettuce, diced tomatoes, extra sour cream or guacamole

Taco seasoning varies a lot in salt, so taste the beef before adding any. If you would rather skip the packet, our homemade taco seasoning works here.

Building a Quesarito, Step by Step

  1. Cook the seasoned beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up, until browned and cooked through to 160°F. Drain excess grease if needed. Sprinkle the taco seasoning over the beef, pour in the water and stir. Simmer 2-3 minutes until the liquid thickens slightly and coats the meat in a saucy layer.
  2. Flavor the rice: In a bowl, combine the warm rice, butter, lime juice, cilantro (if using) and a pinch of salt. Stir until the grains are lightly glossy and separated.
  3. Make the chipotle sauce: Mix the sour cream, mayonnaise, chipotle peppers, adobo sauce, garlic powder, cumin, salt and a tiny pinch of sugar until smooth and pale orange. Add more chipotle for heat, or a bit more mayonnaise if it feels too thick. It should be creamy enough to drizzle but not runny.
  4. Warm the beans, queso and tortillas: Warm the refried beans and nacho cheese or queso in separate small pots or in the microwave until hot and spreadable. Stack the tortillas, cover them with a damp paper towel and microwave 20-30 seconds until pliable, so they fold without cracking.
  5. Make the quesadilla shells: Heat a large nonstick skillet on medium with a light swipe of butter or oil. Place one tortilla in the pan, sprinkle about 1/2 cup shredded cheese over it leaving a 1/2-inch border, and top with a second tortilla. Cook 1-2 minutes per side, until the cheese is fully melted and the tortilla has light golden spots but is still flexible, not crisp. Repeat so you have 2 large quesadillas.
  6. Layer the filling: Lay one warm quesadilla flat on a board. Down the center, leaving 2-3 inches on each side for folding, spread a strip of refried beans. Add a line of cilantro-lime rice, then a generous spoonful of seasoned beef. Drizzle with nacho cheese and a spoonful of enchilada or taco sauce, and sprinkle extra shredded cheese over everything.
  7. Sauce and roll: Drizzle 1-2 tablespoons of the chipotle sauce over the fillings. Fold the sides of the quesadilla in over the filling, then fold the bottom up and roll tightly into a burrito, with the ends sealed and no gaps.
  8. Toast the outside (optional, but recommended): Place the rolled quesarito seam-side down in a dry skillet over medium heat. Cook 1-2 minutes per side until the outside has light brown spots and feels slightly crisp. Slice in half to serve.

Why Quesaritos Tear, Leak or Turn Out Dry

  • Tortilla cracks or tears: The tortilla is cold or too small. Warm the tortillas as in step 4 and use burrito-size (about 10 inches) flour tortillas.
  • Filling spills out: Usually overfilled. A slightly underfilled quesarito rolls tighter and eats better. If fillings spill while you roll, pull some out and try again.
  • Center is not gooey: Cold fillings leave the middle firm. Keep the beef, rice, beans and queso hot so the cheese inside melts.
  • Too dry: The layered sauces are what keep it from tasting like a plain stuffed burrito. Use the nacho cheese, the enchilada or taco sauce and the chipotle cream, not just one.
  • Too spicy: Use one chipotle pepper, or keep the chipotle sauce on the side and use plain sour cream inside.
  • Quesadilla is crisp, not flexible: Overcooked shells crack when folded. Pull them off as soon as the cheese melts and the tortilla shows light golden spots.

Chicken, Vegetarian and Cheese Variations

  • Chicken quesarito: Swap the beef for cooked, shredded or diced chicken tossed with taco seasoning and a splash of chicken broth. Make sure the chicken is cooked through to 165°F.
  • Vegetarian: Skip the meat and double the beans and rice. Sautéed peppers, onions or corn add a hearty texture.
  • Different cheeses: Cheddar, Colby Jack, Monterey Jack or a Mexican blend all melt well. A little Oaxaca or mozzarella makes the center stretchier.
  • Crispier outside: Cook the rolled quesarito a bit longer in a dry skillet or on a grill pan until deep golden.
  • Batch cooking: The seasoned beef and rice can be made ahead and reused in tacos or taco bowls. See our easy ground beef tacos if you want another use for the beef.

What to Serve With Quesaritos

A quesarito is a full meal, so a cool, fresh side works best: shredded lettuce, diced tomatoes, guacamole or extra sour cream on the side. The elote corn salad adds a crunchy, tangy contrast. If you like the Taco Bell copycat theme, the Taco Bell quesalupa is another cheesy one to try.

Make-Ahead, Reheating and Freezing Quesaritos

  • Make ahead: Quesaritos are best fresh, but they can be assembled a few hours ahead. Keep them tightly wrapped in foil in the fridge, then pan-sear or bake at 350°F for 10-15 minutes until heated through.
  • Leftover rice: If you use day-old rice, cool it quickly after cooking and refrigerate it within 2 hours. Reheat leftovers to 165°F.
  • Reheating: Reheat in a skillet over medium heat, turning often, for 5-8 minutes until the outside is warm and lightly crisp and the center is hot (165°F). A 350°F oven or toaster oven also works. The microwave can make the tortilla chewy.
  • Freezing: Cool completely, wrap each quesarito tightly in foil and place in a freezer bag. Freeze up to 2 months. Reheat from frozen in a 350°F oven for about 25-30 minutes, removing the foil for the last 5 minutes so the outside crisps, until hot in the center (165°F).

Refrigerate leftovers within 2 hours and eat them within 3-4 days. The recipe card lists about 800 kcal per quesarito, so this is a hearty portion.

Quesarito FAQ

What is the difference between a quesarito and a burrito?

A quesarito wraps the burrito in a melted-cheese quesadilla instead of a single plain tortilla, so the outside is cheesy and slightly crisp as well as soft.

Can I use fewer tortillas?

Each quesarito needs two tortillas for the quesadilla shell, so this recipe uses 4 to make 2. Burrito-size tortillas give enough room to wrap the filling.
