Simmer 2–3 minutes until the liquid thickens slightly and coats the meat in a saucy layer with a slight sheen.

    Flavor the rice: In a bowl, combine the warm cooked rice, butter, lime juice, cilantro (if using), and a pinch of salt. Stir until the grains are lightly glossy and separated. The rice should smell bright and citrusy, not plain or starchy.

    Make the creamy chipotle sauce: In a small bowl, mix sour cream, mayonnaise, minced chipotle peppers, adobo sauce, garlic powder, cumin, salt, and a tiny pinch of sugar. Stir until smooth and pale orange. Taste and adjust with more chipotle for heat or a bit more mayo if it feels too thick. It should be creamy enough to drizzle but not runny.
