Watermelon Agua Fresca

Watermelon agua fresca is a light, naturally sweet Mexican drink made with fresh watermelon, lime, and just a touch of sugar. It comes together in about 10 minutes with a blender and a strainer — no cooking, no fuss.

Instructions

  1. 1

Blend the watermelon. Add the cubed watermelon to a blender and blend on high for 30–45 seconds until completely smooth and liquidy with no visible chunks.

  2. 2

Strain the pulp. Pour the blended watermelon through a fine-mesh strainer set over a large pitcher. Press the pulp gently with a spoon or spatula until only dry, pale fiber is left in the strainer. Discard the pulp.

  3. 3

Add water, lime, and sugar. Pour the cold water and lime juice into the pitcher. Stir in 1 tablespoon of sugar, taste, and add more if the watermelon isn't very sweet on its own. The drink should taste bright and fruity, not syrupy.

  4. 4

Chill or serve immediately. Fill glasses with ice and pour the agua fresca over the top. Garnish with a lime wheel or a sprig of mint. If making ahead, refrigerate the pitcher without ice for up to 24 hours — it will settle, so give it a good stir before serving.
